Mexican Breakfast Quesadillas

Cube potatoes into even-sized pieces.
Soak potatoes in water to prevent browning (optional).
Heat oil in a pan and fry the cubed potatoes until cooked.
Remove potatoes and set aside.
Cook pork chorizo in the same pan.
Add cooked potatoes back into the pan with chorizo.
Cook bacon to desired doneness and remove from pan.
Remove most of the bacon grease and sauté onions and bell peppers with salt, pepper, and garlic until softened.
Grate white cheddar and queso oaxaca cheese and mix together.
Scramble eggs in the pan and remove once cooked.
Butter a pan and lay in a flour tortilla.
Add a layer of cheese, scrambled eggs, sautéed onions and peppers, chorizo and potatoes, bacon, and another layer of cheese.
Fold the tortilla over and cook until golden on both sides.
Slice the quesadilla and serve with pico de gallo.
