2 tbsp olive oil
Bacon
25g butter
4 eggs, beaten
100g vintage cheddar, grated
4 spring onions, thinly sliced
Small handful of fresh coriander leaves
Sea salt
freshly ground black pepper

Heat olive oil in a pan over medium heat.

Add bacon and cook until crispy.

In a bowl, beat the eggs and season with sea salt and black pepper.

Pour the beaten eggs into the pan with the bacon and scramble until cooked through.

Place a tortilla in the pan, sprinkle with cheddar, add the scrambled egg mixture, spring onions, and coriander, then top with another tortilla.

Cook until the bottom tortilla is golden and crispy, then flip and cook the other side until golden.
