2 leeks finely chopped
250 g fresh mushrooms wiped and chopped into small pieces
3 heaping tsp chicken stock or 1 chicken bouillon
300 ml boiling water
1 heaping tsp mustard
1 heaping tbsp thick fresh cream
100 g fresh cheese type St Moret or similar
1 heaping tbsp fresh cheese with shallots and chives
30 g grated parmesan (optional)
50 g grated cheese
4 egg yolks
150 ml milk
breadcrumb for sprinkling
