This rich and hearty stew is often enjoyed with rice or bread, making it a comforting meal. In Nigeria, it's common to find variations that incorporate local vegetables and spices, reflecting the diverse culinary traditions of the region. Today, vegan adaptations have gained popularity, allowing more people to enjoy this flavorful dish without animal products.

Blend 2 onions, spicy red peppers, ginger, and fresh tomatoes in a blender without adding water.
Pour the blended mixture into a heated pot and cook for 10-15 minutes without oil.
After cooking, add 1/2 cup of vegetable oil to the pot and mix well.
Add vegan or vegetable bouillon cubes and a combination of spices (paprika, ground white pepper, black pepper, thyme, curry powder, cumin) to the pot and stir for 5 minutes.
Roast groundnuts in the oven at 150 degrees Celsius for 20-25 minutes until brownish, or use pre-roasted groundnuts.
Blend the roasted groundnuts with a little water until smooth.
Add the blended groundnuts to the pot and stir.
Boil some hot water separately and add it to the pot to adjust the thickness of the stew.
Cook on medium to low heat for 20 minutes, stirring continuously to prevent burning.
After 15 minutes, stir the pot and add chopped vegetables (remaining onions, carrots, and bell peppers) for crunch.
Cover the pot and simmer for an additional 5 minutes before serving.
