Spread salt on the cocotte.
Cover the potatoes with aluminum foil.
Cook the potatoes slowly in the oven.
Peel the onion and cut it into pieces.
Peel and chop the shallots.
Peel the garlic, remove the buds, and chop it finely.
Cut celery into 1cm cubes.
Peel the carrot and cut into 1cm cubes.
Add olive oil to a hot pan, then add garlic and fry until fragrant.
Add the minced beef and stir-fry until the water evaporates and the meat becomes crumbly.
Add onions, shallots, carrots, and celery to the pan and stir-fry with salt.
Add Herbes de Provence and tomato paste to the mixture.
Pour in red port wine, cover, and let it simmer for about 20 minutes.
Pick parsley, wash it, and chop finely after removing moisture with kitchen paper.
Peel the steamed potatoes carefully as they are hot.
Mash the potatoes with a fork and mix in butter until pureed.
Add salt, pepper, red port wine, and fon blanc to the potato mixture and bring to a boil.
Add milk to the potato puree to adjust the consistency.
Once the beef sauce has boiled down, add the chopped parsley.
Spread the potato puree on top of the beef mixture and level the surface evenly.
Top with plenty of Gruyère and Emmental cheese.
Put the dish in the oven to bake until the cheese is browned.
