Fava Bean and Chickpea Salad

2 cups cooked fava beans, around 250 grams of strained canned beans
2 cups cooked chickpeas, around 250 grams of strained canned beans
1 medium red onion, finely chopped
1 medium tomato, finely chopped
2 cloves of garlic, minced
2 tablespoons lemon juice, adjust to taste
½ cup roughly chopped parsley
10-12 fresh mint leaves
1 tablespoon za'atar
1 teaspoon cumin powder
½ teaspoon red pepper flakes
Ground black pepper to taste
Salt to taste
¼ cup extra virgin olive oil

In a large bowl, combine the cooked fava beans and chickpeas.

Add the finely chopped red onion and tomato to the bowl.

Stir in the minced garlic, lemon juice, chopped parsley, and fresh mint leaves.
