Peel and core the gala apples, then chop them into small pieces.
Pour lemon juice over the chopped apples and let them sit.
In a bowl, whisk the egg slightly.
Add milk, melted butter, and vanilla extract to the egg and whisk together.
In another bowl, mix flour, baking powder, salt, sugar, nutmeg, and cinnamon.
Combine the dry ingredients with the wet ingredients, mixing until just combined.
Fold in the chopped apples with lemon juice into the batter.
Heat about an inch of canola oil in a skillet until hot.
Using a spoon or scoop, drop spoonfuls of the batter into the hot oil.
Fry until golden brown, flipping as needed.
Remove fritters from the oil and drain on paper towels.
Transfer to a wire rack and dust with powdered sugar before serving.
