Cut 2 honey crisp apples into small cubes.
Add 1/4 cup lemon juice to the apples and stir to prevent browning.
In a skillet over lower than medium heat, melt 2 tablespoons of butter.
Add the apples, 2 tablespoons of granulated sugar, 1/4 teaspoon of cinnamon, and 1/4 teaspoon of vanilla to the skillet.
Cook the apples for about 8 minutes until slightly crisp and soft, stirring occasionally until the liquid evaporates.
Remove the apples from heat and let them cool completely.
In a mixing bowl, combine 1 2/3 cups of all-purpose flour, 1/4 cup of white granulated sugar, 3/4 teaspoon of salt, 3/4 teaspoon of cinnamon, 2 1/2 teaspoons of baking powder, and a pinch of nutmeg.
In another bowl, whisk together 1/2 cup of milk, 2 eggs, and 2 teaspoons of vanilla extract.
Add the wet ingredients to the dry ingredients and mix well.
Fold in the cooled apples and 2 tablespoons of melted butter into the batter until combined.
Heat 2 cups of canola oil in a skillet to 360°F, adjusting to 350°F when batter is added.
Drop spoonfuls of batter into the hot oil, shaping them like small shoes.
Fry for about 1 to 1.5 minutes on each side until golden brown.
Remove fritters and place them on a rack lined with paper towels to drain.
Let the fritters cool completely before glazing.
In a bowl, combine 2 cups of powdered sugar and 1/2 teaspoon of vanilla extract.
Slowly add milk (up to 1/4 cup) to the powdered sugar, stirring until the desired glaze consistency is reached.
Brush the glaze on top of the fritters or dip them into the glaze.
Enjoy the apple fritters.
