In a skillet, melt the butter over medium heat. Add diced apples, lemon juice, sugar and cook for 4-5 minutes until slightly softened. Set aside to cool.

In a large bowl, whisk together flour, baking powder, salt, cinnamon, ginger, nutmeg, and sugar.

In another bowl, whisk the eggs with buttermilk (or milk) and vanilla.

Pour the wet mixture into the dry ingredients. Stir gently until just combined (a few lumps are fine). Fold in the cooked apples.

In a deep pan or Dutch oven, heat 2–3 inches of oil to 350–360°F (175–182°C).

Using a spoon or small scoop, carefully drop about ¼ cup of batter into the hot oil for each fritter. Fry for 2–3 minutes per side, until golden brown. Remove with a slotted spoon and drain on a wire rack set over a baking sheet.
