Nutritional yeast is dairy-free and adds umami.

Boil salted water in a pot.

Prepare Swiss chard leaves by blanching them in boiling water until soft.

Immediately cool the blanched leaves in ice water to preserve color and texture.

In a mixing bowl, combine 160 g of flour, 2 dl of milk, pepper, salt, and a pinch of nutmeg; mix well to form a batter.

Finely chop the smoked meat and mix it into the batter.

Lay the Swiss chard leaves flat, overlapping them slightly to create a larger surface area.

Place a spoonful of the filling at the base of the leaves and roll them tightly.

Place the rolled capuns in a steamer basket.

Cover with a lid and steam for 15 minutes until cooked through.
