Raspberry Crumble Bars

1 cup quick cooking oats
1 1/2 cups oat flour
1/2 cup brown sugar
1/2 tsp baking powder
1/4 tsp salt
1/2 cup melted butter
2 cups raspberries
1/2 cup granulated sugar
1 tbsp cornstarch
1 tsp vanilla extract
1 tbsp lemon juice

Blend half of the quick cooking oats in a blender until smooth to make oat flour.

In a bowl, combine oat flour, remaining quick cooking oats, brown sugar, baking powder, and salt. Mix well.

Add melted butter to the dry ingredients and mix until well incorporated.

Prepare an 8x8 inch baking dish lined with parchment paper.

Press about two-thirds of the oat mixture into the bottom of the baking dish to form a base.

In a saucepan, combine raspberries, sugar, cornstarch, vanilla, and lemon juice. Simmer over medium heat for 6-8 minutes until thickened.

Pour the raspberry mixture over the oat base in the baking dish and smooth it out.

Crumble the remaining oat mixture over the raspberry filling.

Preheat the oven to 350 degrees Fahrenheit and bake for 25-30 minutes until golden on top.
