In a separate bowl, beat the eggs and season with salt.
Push the noodle mixture to one side of the pan and pour the beaten eggs into the empty side.
Scramble the eggs until cooked, then mix them into the noodles.
Add chopped scotch bonnet pepper for heat, if desired.
Garnish with chopped spring onions before serving.
