Start with a sauté pan on high heat.

Add 1/4 cup of fresh squeezed lemon juice to the pan.

Add 1/2 teaspoon of chopped shallot and a pinch of salt.

Reduce the lemon juice until it's about half its original volume.

Slowly incorporate 1/4 stick of cold butter into the lemon juice reduction, adding pats of butter and swirling to melt it into the sauce.

Once the butter is incorporated, add a little bit of parsley to finish the sauce.

Serve the sauce over a tilapia fillet, adding a few almonds and a little fresh parsley.
