Keto Carnitas

Cultural Context

Carnitas, meaning 'little meats' in Spanish, originates from the Mexican state of Michoacán. Traditionally made with pork, this dish is a staple at celebrations and family gatherings, often served in tacos or burritos. The slow-cooking method allows the meat to become tender and flavorful, making it a favorite for many. In modern times, keto variations have emerged, focusing on low-carb ingredients while maintaining the essence of this beloved dish.

1

Place the porquetta or pork roast in a large crock pot.

2

If not using a crock pot, place the roast in a roasting pan or casserole dish with a rack.

3

In a small bowl, stir together olive oil, salt, dry Italian seasoning, garlic powder, onion powder, paprika, pepper, and fennel seeds.

4

Brush the seasoning mixture all over the pork roast until fully coated.

5

Place the roast back into the crock pot or roasting pan.

6

Pour chicken broth around the outside of the roast (14.5 oz for a 5 lb roast).

7

Close the lid of the crock pot and cook on high for about 6 hours or until the internal temperature reaches at least 145°F.

8

If baking, preheat oven to 450°F and cook for 15-30 minutes until skin blisters, then reduce to 350°F and cook for 1-3 hours until fully cooked.

9

Let the pork roast sit for 10-15 minutes before shredding.

10

Use two forks to shred the pork into pieces.

11

Warm the tortillas in the microwave for about 15 seconds.

12

Top the tortillas with shredded pork and desired toppings (shredded cheese, baby spinach, salsa, sour cream, avocado).
