In a bowl, whisk together eggs, heavy cream, and lemon juice.

Fold in the mushroom-spinach mixture and grated gruyere cheese.

Grease a baking dish with butter and sprinkle with bread crumbs.

Pour the egg mixture into the prepared dish.

Bake in the preheated oven until set and golden, about 25-30 minutes.

Let cool slightly before serving, garnished with parsley.
