Measure 500 grams of all-purpose flour using a kitchen scale.
Add a pinch of salt to the flour.
Measure 200 mils of water and crack in 1 egg.
Mix the dry ingredients with the wet ingredients using a rice paddle until it starts to come together.
Knead the dough by hand until uniform and smooth, then place it in a bowl and let it rest for 30 minutes.
Dice 2 onions and cut the pumpkin into small slivers.
Cube 300 grams of lamb shoulder, removing any bones and excess fat.
Season the lamb with salt and pepper, then mix the filling ingredients together.
Roll out the rested dough into a rectangle on a floured surface.
Drizzle olive oil over the rolled-out dough and spread the filling evenly on top.
Roll the dough tightly from one edge to form a log, pinching the edges to seal.
Prepare a steamer basket by coating it with olive oil.
Transfer the dumpling log into the steamer basket and place it over boiling water.
Steam the dumpling for 30 minutes.
