Quarter the pears and remove the core, leaving them in quarters.
In a bowl, combine cinnamon, star anise, cinnamon sticks, maple syrup, and a good glug of extra virgin olive oil.
Stir the mixture to coat the cinnamon sticks and star anise with the spices.
Add the quartered pears to the bowl and stir until they are completely covered with the spicy mixture.
Heat the mixture until hot, ensuring the pears are coated in the spicy juice.
While the pears are cooking, prepare the spiced yogurt by using Greek style yogurt.
Grate the orange rind, avoiding the white pith, and then cut the orange in half to squeeze in some juice.
Mix the grated orange rind and orange juice into the yogurt along with cardamom and cinnamon, then set aside to meld flavors.
Check the pears, cooking until the sauce evaporates and becomes sticky, turning them to caramelize both sides.
Plate the dish by placing a generous dollop of spiced yogurt on a plate, adding a couple of pears on top, and placing a cinnamon stick and star anise for decoration.
Drizzle some of the pan juices over the pears and finish with chopped almonds.
