Shallots - 3 small size
Garlic - 2 cloves
Ginger - 1/2 inches
Water - 1/2 Cup
Malaysian Curry Powder - 5 TBSP
Red Chilli Powder - 1 & 1/2 TBSP
Chicken - 1/2 KG
Potatoes - 3 medium size
Cardomom - 3
Star Anise - 3
Cinnamon Stick - 1
Chopped Garlic - 2 cloves
Chopped Ginger - 2 inches
Curry Leaves - 1 stalk
Salt - To Taste
Sugar - 1 TSP
Coconut Milk - 200ML
Tamarind Water - 1 TSP

First, we gonna make white paste, take your shallots, garlic and ginger and put it in a blender with water and blend it into a paste and set it aside.

Next, add Malaysian curry powder and red chilli powder in a bowl, add water and make a red paste. set it aside too.

Now, Take a pot, add oil. Then add cinnamon, cardamom and star anise, give it a stir.

Next, add chopped garlic, ginger, shallots and 1 stalk of curry leaves and cook it for few minutes. Keep stirring.

Next, add your white paste, stir it, then add red paste and add the remaining red paste with water and give it a stir and let it cook for 2-3 mins.

Now add your chicken, stir it, add potatoes mix it and add water and mix it again and put the lid on until chicken is half-cooked.

Take the lid off, add coconut milk, salt, sugar and tamarind water, mix it and let it cook for another 20 mins with lid on until your chicken is done.
