Boil the potatoes until fork tender.

Cut the chicken breasts to create a pocket for stuffing.

In a bowl, mix 8 ounces of softened cream cheese, 1 cup of thawed frozen chopped spinach, juice from half a lemon, shredded parmesan cheese, salt, pepper, dried oregano, garlic powder, onion powder, and paprika or smoked paprika.

Season the outside of the chicken breasts with salt, pepper, and the same seasonings used in the spinach mixture.

Stuff the chicken breasts with the spinach filling until they cannot be stuffed anymore.

In a pan on medium to medium-high heat, add olive oil and sear the stuffed chicken breasts until golden brown.

Transfer the seared chicken to a different pan to finish cooking in the oven.

In a separate pan, add olive oil and cook the broccolini on medium to medium-high heat until seared on both sides.

For the mashed potatoes, drain the boiled potatoes and add garlic paste, melted butter, heavy cream, sour cream, salt, black pepper, and chopped chives. Mash to desired consistency.
