Heat a 14-inch skillet over medium heat and add 2 tablespoons of olive oil.
Add 16 ounces of fresh spinach to the skillet and press it down to cook.
While the spinach cooks, prepare 2.5 pounds of chicken breasts by splitting them in half for even cooking.
Season the chicken with salt and pepper on both sides.
Once the spinach has cooked down (about 2 minutes), remove it from the skillet and set aside.
Add another tablespoon of olive oil to the skillet and place the seasoned chicken in the pan.
Cook the chicken for about 5-6 minutes per side until browned and cooked through, scraping up any bits from the bottom of the pan.
Once cooked, remove the chicken from the skillet and slice it into pieces.
Chop a whole shallot and add it to the skillet, along with 1 tablespoon of garlic, cooking until softened.
Squeeze excess liquid from the cooked spinach and add it back to the skillet with the shallot and garlic.
