500g white mushrooms (cleaned)
1 medium ripe tomato
1 tbsp olive oil
2 tbsp chopped spring garlic
1 small onion, thinly sliced
A handful of chopped spring coriander
1 tbsp mild hot chili powder (adjust to taste)
1 tsp ginger-garlic paste
½ tsp crushed Sichuan pepper (timur)
Salt to taste
½ tsp roasted cumin powder
Juice of half a lime (adjust to taste)
2 tbsp mustard oil
½ tsp fenugreek seeds
2 cloves garlic, thinly sliced
1 small piece ginger, thinly sliced
1 dried red chili, sliced
½ tsp turmeric powder

Brush the mushrooms with olive oil and season with salt and chili powder.
