Mushroom Chhoila hails from the Newar community of Nepal, traditionally made with meat but adapted here for vegetarians. This dish celebrates the earthy flavors of grilled mushrooms, enhanced by spices and fresh herbs, making it a popular choice for festive occasions and gatherings. Today, it has gained popularity beyond Nepal, often featured in restaurants serving South Asian cuisine.

Clean and slice the mushrooms into thick pieces.
Heat a grill or roasting pan over medium-high heat.
Brush the mushrooms with olive oil and season with salt and chili powder.
Grill the mushrooms until charred and tender, about 5-7 minutes per side.
Remove the mushrooms from the heat and let them cool slightly.
In a bowl, mix together the ginger-garlic paste, chopped spring garlic, roasted cumin powder, and crushed Sichuan pepper.
Add the grilled mushrooms to the bowl and mix well to coat.
Drizzle with lime juice and additional mustard oil if desired.
Finely chop the onion and tomato, then add to the mushroom mixture along with chopped spring coriander.
In a small pan, heat mustard oil and add fenugreek seeds, sliced garlic, sliced ginger, dried red chili, and turmeric powder to make the seasoning (tadka).
Pour the seasoning over the mushroom mixture and mix well before serving.
