Pork shanks are often more affordable and can provide a similar texture.
Open two packages of oxtails.
Season the oxtails with garlic powder, cayenne pepper, salt, black pepper, and ground thyme.
Heat a 10-inch or 12-inch pot on the stove.
Add oil to the pot (optional, can cook without it but may reduce flavor).
Sear the oxtails in the pot, turning them on all six sides until browned.
Add diced onions to the pot and allow them to caramelize.
Return the seared oxtails to the pot with the caramelized onions.
Add water to the pot until the oxtails are covered.
Cover the pot with a lid, venting slightly to prevent boiling over.
Check the oxtails periodically, adding more water as needed until they become tender.
Prepare potato salad by boiling one large potato and one medium potato along with four eggs.
Dice the boiled potatoes and mix them with diced onions, peas, and carrots for the potato salad.
Add salad dressing to the potato salad mixture.
