Place a pot of water on the heat, cover, and bring to a boil.

Once boiling, add salt, rinse the beans, and transfer them to the boiling water. Cover and boil for 15 minutes.

Strain the water from the beans and rinse them thoroughly with clean warm water.

Transfer the beans back to the heat in a clean pot with fresh water and add chopped onions and salt. Cover and cook until the beans are about 85 percent cooked.

Blend Scotch bonnet peppers, onion, and crayfish with some water until roughly blended, then set aside.

Once the beans are 85 percent cooked, add rinsed rice to the pot along with proteins of your choice (smoked fish, smoked goat meat, cooked goat meat).

Add the blended pepper mixture, seasoning powder, salt, and palm oil to the pot. Mix to combine and add water if needed.

Cover and cook until the rice is tender, mixing occasionally.

When the water is not completely dry, mix again and cover, allowing to cook for another 5 minutes to achieve a smoky aroma.
