Lentil Moi Moi is a popular Nigerian dish made from blended lentils and spices, traditionally steamed in containers or banana leaves. It is often served as a side dish or main course and is celebrated for its rich protein content and flavor. This dish reflects the resourcefulness of Nigerian cuisine, using legumes as a staple ingredient. Modern variations may include different vegetables or proteins, making it adaptable to various dietary preferences.

Flaxseed meal can replace egg for binding in a vegan version.
Soak the red split lentils for about 10 to 15 minutes to soften them up.
Rinse the lentils thoroughly until the water runs clear.
In a blender, add the lentils, egg, chili bell peppers, onions, garlic paste, paprika powder, seasoning cubes, and salt.
Add some vegetable oil and water to the blender to make the blending process easier.
Blend the mixture on medium speed until very well pureed.
Transfer the lentil puree into a bowl.
Perform a double blending method by adding the lentil puree back into the blender in smaller portions and blending each portion for about 30 to 45 seconds.
If the mixture is too thick, add more water to loosen it up.
Pour the first portion of the blended mixture into another bowl and continue blending until all the puree is smooth.
Place some water in a pot on medium heat and add the leaf stalks to the bottom to create a base for the moi moi wraps.
To fold the moi moi leaves, place one leaf over another, break the stalk at the center, and roll from the bottom to create a cone shape.
Transfer some lentil batter into the cone-shaped leaves, being careful not to overfill them.
Seal the moi moi wrap by pushing the center in, folding the sides, and bending it over backwards.
Transfer the wrapped moi moi to the pot and repeat with the remaining batter.
Place some leaves on top of the moi moi wraps to trap the steam inside the pot.
Cover the pot and cook for 30 to 35 minutes or until the moi moi is set.
Allow the pot to cool for 10 to 20 minutes after cooking to help the moi moi set perfectly without breaking.
Unwrap the moi moi and serve.
