Prepare the base by sautéing 2 kg of pork fat, 1 kg of chopped onion, and crushed garlic until fragrant.

Add 7.5 kg of rice (half parboiled and half regular) to the sautéed mixture.

Pour in 15 liters of broth (or water if broth is unavailable) and 80 g of salt, then mix well.

In a separate pan, melt 750 g of pork fat and sauté 200 g of garlic and 2 kg of finely chopped onion until aromatic.

Add 200 g of poleo, 200 g of cilantro, and 150 g of cimarrón to the sautéed mixture, along with 40 g of cumin and salt to taste.

Combine the sautéed mixture with the cooked rice and add 3 kg of precooked peas, mixing thoroughly.

Prepare the intestines by rinsing them to remove excess salt and ensure they're at room temperature.

Using gloves, mix the pork blood into the combined ingredients until well incorporated.

Stuff the mixture into the cleaned intestines carefully, ensuring not to overfill them to prevent bursting during cooking.

Boil the stuffed sausages in water for about 5 to 10 minutes until cooked through.
