Sarma, meaning 'wrapped' in Turkish, is a cherished dish in Turkish cuisine, often made during special occasions and family gatherings. Traditionally, grape leaves are stuffed with a mixture of rice, meat, and spices, showcasing the region's agricultural bounty. This dish has transcended borders, with variations found in Greek, Arab, and Balkan cuisines, each adding their unique twist to the recipe.

Remove salty pickled grape leaves from brine and soak in hot water to remove salt.
Wash and drain the grape leaves.
Chop 1 medium onion finely and place it in a bowl for the filling.
Add 300 grams of ground meat to the bowl.
Wash 2.5 cups of rice and add it to the bowl.
Add 1 heaping teaspoon of pepper paste and 1 heaping tablespoon of tomato paste to the mixture.
Add 1/2 tea glass of sunflower oil to the mixture and mix everything well, using gloves or a spoon.
Cut the stems off the grape leaves with a knife.
Lay out the grape leaves on the counter and start filling them with the mixture using a teaspoon.
Spread the filling evenly on the leaf and roll it up tightly.
Be careful not to overfill the leaves to prevent them from bursting during cooking.
Continue rolling the grape leaves until you have a sufficient amount.
Place the rolled grape leaves in a pot, leaving some unrolled for later.
Slice some lemon and place it on top of the rolled leaves in the pot.
Prepare the sauce by mixing 1 tablespoon of tomato paste with a little salt and water.
Pour the sauce over the rolled grape leaves in the pot and add boiling water until covered.
Drizzle 1/2 tea glass of sunflower oil over the top.
Cover the pot with a lid and place it on the stove.
Cook on low heat for 1.5 hours, adding water as needed during cooking.
After 1.5 hours, turn off the heat and let it rest for a bit before serving.
Use tongs to serve the grape leaves onto a plate.
