Grind 1.5 tablespoons of flaxseeds and 1 cinnamon stick to a fine powder.
Transfer the ground flaxseeds and cinnamon to a bowl and add 1/4 cup of water, stir and set aside.
In a large bowl, add 1.25 cups of oat flour.
Grind 0.5 cup of freshly grated coconut and add it to the oat flour, pressing it well into the measuring cup.
Add 1/4 teaspoon pink Himalayan salt to the oat flour and mix in the grated coconut.
Add 0.5 teaspoon baking soda and 0.5 teaspoon baking powder to the mixture and mix well, then set aside.
In another bowl, add 0.5 cup of coconut palm sugar.
In the same measuring cup, add 0.5 cup of virgin coconut oil and mix well with the sugar.
Add the thickened flaxmeal and cinnamon mixture to the sugar and oil mixture and mix well.
Add 1 tablespoon of vanilla essence to the mixture and mix again.
Combine the wet ingredients with the dry ingredients and mix until combined.
Preheat the oven to 180°C (356°F).
Add 3/4 cup of rolled oats to the mixture and mix well.
Fold in 1/3 cup of chocolate chips or chopped dark chocolate.
Grease a tablespoon with coconut oil and scoop the cookie dough onto a baking tray lined with parchment paper, leaving space between each cookie.
Sprinkle extra chocolate chips on top of the cookie dough.
Bake in the preheated oven for 12-15 minutes, checking after 12 minutes for doneness.
Once baked, allow the cookies to cool on the cookie sheet before removing.
