Add chopped carrots and potatoes, bay leaves, salt, and black pepper.
Cover and simmer for 1-1.5 hours, until beef is tender.
Stir occasionally and add water if necessary to maintain consistency.
Remove bay leaves and stir in lime juice before serving.
Garnish with fresh coriander.
