Karoo Roast Ostrich Steak

Preheat the oven to 200°C (400°F).
Rub the ostrich steak with olive oil, garlic, rosemary, thyme, salt, and black pepper.
Heat a skillet over high heat until hot.
Sear the ostrich steak for 2-3 minutes on each side until browned.
Transfer the skillet to the preheated oven and roast for 10-15 minutes until medium-rare.
Remove the steak from the oven and let it rest for 5 minutes.
In the same skillet, add butter, chopped onion, and carrots; sauté until softened, about 5 minutes.
Add potatoes and cook for another 5 minutes, stirring occasionally.
Pour in red wine and vegetable broth, scraping up any browned bits from the pan.
Add bay leaves and simmer for 10 minutes until sauce thickens slightly.
Stir in lemon juice and adjust seasoning as needed.
Slice the ostrich steak against the grain and serve with the vegetable medley.
