Peel and break up the bananas into manageable pieces.
Mash the bananas with a potato masher for about 2 minutes until soft.
Mix the mashed bananas with 2 cups of water until combined.
Add 1 cup of coconut cream, 1/2 cup of sugar, and 1 teaspoon of vanilla essence to the banana mixture.
Stir in the lemon rind and allow the mixture to sit for about half an hour.
Remove the lemon rind before serving.
