Instructions
- 1Preheat the oven to 400°F (200°C).
- 2In a large bowl, combine curry powder, turmeric, cumin, coriander, salt, and black pepper.
- 3Add minced garlic, grated ginger, chopped green chili, and lemon juice to the spice mixture.
- 4Mix well to form a paste.
- 5Coat the chicken pieces with the spice paste thoroughly.
- 6Heat vegetable oil in a skillet over medium heat until shimmering.
- 7Sear the chicken pieces for 3-4 minutes on each side until golden brown.
- 8Transfer the seared chicken to a baking dish.
- 9Pour coconut milk over the chicken evenly.
- 10Slice onion and scatter it over the chicken in the baking dish.
- 11Cover the dish with aluminum foil.
- 12Bake in the preheated oven for 30-35 minutes until the chicken is cooked through.
- 13Remove the foil and bake for an additional 10 minutes to brown the top.
- 14Garnish with fresh cilantro before serving.

Almond milk reduces calories while maintaining creaminess
Preheat oven to 400 degrees.
Make sure your chicken has been patted dry before adding your salt and pepper to taste. Set it aside.
Mix your sauce ingredients together and then divide the mixture in half. Reserve half for dipping later.
Brush the other half of the mixture all over the tops of the chicken breasts. Making sure to get a nice coating on all of them.
If you want, you can sprinkle a little more Parmesan over the tops, but this is optional.
Bake the chicken for about 35 minutes or until it reaches a 165 degrees.
To brown the tops of your chicken broil on high for a few minutes, but watch it carefully to avoid burning it.
