Gradually mix in 200 ml of milk by hand to form a dough.

Knead the dough on a surface until smooth and then divide into balls of approximately 35 grams each.

Grate 300 grams of San Javier cheese and 200 grams of fresh cheese, mixing them together.

Chop 1 onion and locoto into small pieces, then sauté them in a bit of oil with salt and add the quirquiña or oregano if needed.

Combine the sautéed mixture with the cheese, adjusting salt to taste.

Roll out the dough balls into round shapes, not too thin, and fill them with the cheese mixture.

Seal the empanadas by removing air and crimping the edges.

Place the empanadas on a greased baking sheet, brushing the spicy ones with ají Colorado and the non-spicy ones with milk.
