dark rum

💰Cheaper: apple juice
Non-alcoholic rum extract maintains flavor without alcohol.
mixed dried fruit
🥗Healthier: unsweetened dried fruit
💰Cheaper: raisins
Raisins are a budget-friendly alternative with similar texture.
butter
🥗Healthier: coconut oil
💰Cheaper: margarine
Coconut oil offers a dairy-free option while margarine is often cheaper.
brown sugar
🥗Healthier: coconut sugar
💰Cheaper: white sugar
White sugar is often less expensive than brown sugar.
Start by creaming butter and brown sugar using a hand mixer.
Switch to an industrial mixer to finish creaming the butter and sugar until fluffy.
Separate the eggs and add the yolks to the creamed mixture, mixing well.
Add lemon zest and a little lemon juice to the mixture.
Incorporate guava jam and strawberry jam into the mixture.
Add molasses and two types of browning for color, being careful not to add too much to avoid bitterness.
Mix the dry ingredients (flour, cinnamon, nutmeg, baking powder, salt) in three or four batches to avoid clumping.
Use a spoon to cut and fold in the dry ingredients after the eggs are mixed in, ensuring no lumps remain.
Blend the mixed dried fruit until pureed before adding it to the mixture.
Add browning to achieve the desired color, mixing until well combined.
Grease the baking tins with Crisco lard and line with grease paper for easy removal.
Preheat the oven to 300°F (150°C) and prepare a water bath to keep the cakes moist while baking.
Pour the batter into the prepared tins and bake at 300°F for about 1.5 hours, checking for doneness.
Spray the finished cakes with a liquid mixture to keep them moist while they are still hot.
