1 Tsp Curry Powder
½ Tsp Ground Coriander
½ Tsp Ground Turmeric
½ Onion
1 Spring Onion
½cm Ginger
2 Cloves Garlic
2 Red Chillies
4 Stems Coriander
100ml Coconut Milk
2 Tbsp Peanut Oil
1 Tbsp Sugar
800ml Chicken/Vegetable Stock
Salt to Taste

Slice onion, chillies and spring onion into thin threads.

Finely chop the ginger, garlic and coriander.

Heat oil in the wok and fry the onion on medium heat for 2 minutes until soft.

Add the stock, bring to the boil, then simmer for 15 minutes.
