1 lb. long pasta of your choice (Linguine)
Olive oil
1 shallot, chopped fine
3-4 garlic cloves, minced
2-3 anchovy filets
1 tbsp. Calabrian chili paste
1/4 cup white wine
1.5 tbsp. capers
1/2 cup kalamata olives (pitted)
1/2 cup Italian green olives (pitted)
Salt & pepper to taste
4 tbsp. butter
1/4 cup fresh Italian parsley, chopped

Add the can of tomatoes to a large mixing bowl, and break down the tomatoes with your hands. Set aside.

Bring a large pot of water to a boil for the pasta. Once boiling, salt heavily and add pasta. Cook according to package instructions for al dente.

Coat a large sauce pan or saucier with olive oil over medium heat.

Add shallot and garlic. Cook until garlic is golden, about 2-3 minutes.

Add anchovy and break down with a spoon, cooking for a couple of minutes.

Add chili paste and mix together.

Add white wine and cook down for 2 minutes.

Add capers and olives, cooking down for another 2 minutes.

Add crushed tomatoes to the sauce pan and season with salt and pepper to taste.

Turn heat to low and simmer sauce for about 10 minutes.

Once pasta is cooked, add a couple ladles of pasta water to the sauce pan.

Using tongs, add the cooked pasta into the sauce without draining it. Lightly fold the pasta into the sauce until fully coated.
