1

Oil the sides and bottom of 150 ml ramekins with vegetable oil or canola oil.

2

In a saucepan, combine 600 ml cream and 50 grams caster sugar over low heat, stirring until sugar dissolves and mixture is heated until steaming.

3

Remove from heat and stir in 2 teaspoons of vanilla extract.

4

In a separate bowl, mix 4 tablespoons of Irish cream with 3.5 teaspoons of powdered gelatin and let sit for about 5 minutes.

5

Heat water in a small saucepan and place the bowl with the Irish cream and gelatin mixture in it to dissolve the gelatin.

6

Once dissolved, combine the gelatin mixture into the cream and sugar mixture, whisking to combine.

7

Pour the mixture evenly into the prepared ramekins using a ladle.

8

Allow to cool to room temperature before refrigerating for about 3 to 4 hours until set.

9

To unmold, dip the ramekins in hot water briefly to loosen, then invert onto a plate.
