Preheat the oven to 180°C (350°F).
Roll out the shortcrust pastry and line a pie dish with it.

Remove the casing from the black pudding and crumble it into the pan with the onions.
Cook for 3-4 minutes until the black pudding is heated through.
In a bowl, whisk together eggs, cream, milk, thyme, nutmeg, salt, and black pepper.
Spread the black pudding mixture evenly over the baked pastry.
Pour the egg mixture over the black pudding and sprinkle with cheese.
Bake in the oven for 30-35 minutes until the filling is set and golden on top.
Allow to cool slightly before slicing.
Garnish with fresh parsley before serving.
