Start by preparing the marinade with 1/2 teaspoon of cumin seeds, 1/4 teaspoon of whole peppercorns, 1 whole clove, and 1 cinnamon stick.

Add dried Mexican oregano and whole garlic cloves soaked in cider vinegar to the blender.

Remove the stems and seeds from 1 ancho chili and 6 guajillo chilies, then toast them in a hot pan for about 1 minute.

Soak the toasted chilies in hot water for about 20 minutes to reconstitute them.

Toast the spices (cumin seeds, peppercorns, and cinnamon stick) in a hot pan for about a minute until fragrant, then remove from heat.

Add the soaked chilies, 2 cloves of garlic, 2 tablespoons of cider vinegar, toasted spices, a pinch of salt, and black pepper to the blender along with about a third of the water from soaking the chilies, then blend until smooth.
