Stir in 16 oz of elbow noodles and cook until al dente, about 7 to 8 minutes, without straining the pasta.

Remove from heat and add 2 cups of pepper jack cheese and 3 to 4 cups of medium cheddar cheese; stir until melted and combined.

Sprinkle panko bread crumbs over the top for a crunchy coating.
