Teig: Mehl, Eier, Magerquark, Wasser und Salz verrühren und mit der Holzkelle schlagen, bis der Teig Blasen wirft. Eine Stunde ruhen lassen.
Salsiz in ca. 3 mm kleine Würfel schneiden.
Petersilie, Schnittlauch und krause Minze fein schneiden und mit den Salsizwürfelchen unter den Teig mischen.
Die blanchierten Mangoldblätter flach auslegen. Je mit einem Teelöffel Teig belegen. Satt aufrollen.
Viel gesalzenes Wasser zum Kochen bringen. Capuns darin etwa 10 Minuten ziehen lassen.
Fond: Butter in einem Pfännchen aufschäumen lassen. Schalotten darin andünsten, Speckstreifen hinzufügen und mit Bouillon auffüllen.
Lorbeerblatt dazugeben und etwas reduzieren lassen. Abschmecken.
Die gekochten Capuns in die kräftige Bouillonreduktion legen und 8 bis 10 Minuten zugedeckt sanft köcheln lassen.
Fertigstellen: Die Speckscheiben in einer Pfanne knusprig braten. Anschliessend den Speck herausnehmen und die fein geschnittenen Zwiebeln im Fett, welches noch in der Pfanne ist goldgelb rösten.
Butter in einem Pfännchen bei mittlerer Hitze unter ständigem Rühren zur Nussbutter schlagen.
Anrichten: Capuns in flachen Tellern anrichten, mit einem Teil des Kochfonds übergiessen, mit Speck und Zwiebeln belegen, etwas gehobelten Alpkäse darauf verteilen und mit fein geschnittenem Schnittlauch und der Nussbutter servieren.
