While noodles cook, heat olive oil in a skillet over medium heat.

Add diced bacon to the skillet and cook until crispy, about 5-7 minutes.

In a bowl, whisk together eggs, grated parmesan cheese, and black pepper until well combined.

Once noodles are cooked, reserve some pasta water and drain the rest.

Add the drained noodles to the skillet with bacon and toss to combine.

Remove skillet from heat and quickly add the egg mixture, stirring rapidly to create a creamy sauce.

If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

Add minced garlic and chopped parsley, mixing well to incorporate.
