Boil water in a pot.

Add tomatoes, cilantro, and a little less than half of a red onion to the pot.

Add 1 clove of garlic to the pot.

Chop half a cabbage and a carrot into small pieces.

Pour boiling water over the chopped cabbage and let it sit to soften.

In a separate pot, prepare the refried beans by adding half of a can and salt to taste.

Cut mozzarella cheese into small pieces and heat in the microwave for about 20 seconds, checking to ensure it doesn't melt too much.

Once the cheese is soft enough to squeeze, break it up with your hands.

Let the boiling mixture cool down before blending, saving the water for the dough.

In a bowl, add about half a bag of maseka and water from the boiling pot to achieve a doughy consistency.

Add vinegar, pepper, and oregano to the cabbage salad to taste.

Blend the tomato mixture in batches, using the boiling water to help blend it smoothly.

Boil the refried beans for about 6 minutes after mixing them with the other ingredients.

Grab a portion of the dough, make a hole in the center, and fill it with the refried beans mixture.

Wrap the dough around the filling and flatten it out to form a pupusa.

If needed, use parchment paper to help flatten the pupusa.

Cook the pupusas on medium heat for 2-3 minutes on each side until golden brown.
