Fold the edges of the disc over the filling and pinch to seal.

Heat a 12-inch cast iron skillet over medium heat and add a little oil.

Cook each pupusa for 3-4 minutes on each side until golden brown.

Prepare the curtido by mixing 1 cup of shredded cabbage, 1/2 cup of shredded carrots, 1/4 cup of vinegar, 1 teaspoon of oregano, and 1/2 teaspoon of pepper in a bowl.

Let the curtido sit for at least 30 minutes to develop flavors.

Serve pupusas warm with curtido and sour cream on the side.
