Choose fresh, crispy kale for the best results, avoiding wilted leaves.
Remove the fibrous stem by pinching the base and pulling the leaves off.
Tear the kale into bite-sized pieces or chop into roughly one-inch pieces.
Spread the kale leaves on a half baking sheet, ensuring they are evenly spaced and not touching.
Drizzle 2 tablespoons of olive oil over the kale leaves, adjusting to taste if desired.
Sprinkle 1/2 teaspoon of salt over the kale, with the option to add other spices if preferred.
Preheat the oven to 350°F (175°C).
Place the baking sheet in the oven and set a timer for 8 minutes.
Open the oven occasionally to let out steam, which helps the kale crisp up.
After 8 minutes, check the kale chips; if they are still soft, continue baking for an additional 2 minutes.
Check for crispiness; the chips should feel light and crispy to the touch before removing them from the oven.
If storing, keep in an airtight container at room temperature for a day or two, or freeze for better crispiness.
