Preheat the oven to 350 degrees.
In a bowl, whisk together 2.5 cups of all-purpose flour, 0.5 cup of granulated sugar, and 0.75 teaspoon of salt.
Pour 16 tablespoons of melted unsalted butter over the dry ingredients and mix until it forms a thick dough, ensuring no flour pockets remain.
Line a 9 by 13 inch pan with a foil sling for easy removal later.
Crumble the dough into the pan and press it out into an even layer using your hands.
Use a fork to make little marks about an inch apart on the surface of the dough to prevent bubbling during baking.
Bake in the preheated oven for 25 to 30 minutes until the top is light brown and feels firm.
Let the shortbread cool in the pan for at least 20 minutes before proceeding to the caramel layer.
In a saucepan over medium heat, combine 1 can of sweetened condensed milk, 7 ounces of brown sugar, 0.5 cup of corn syrup, 8 tablespoons of unsalted butter, and 0.5 teaspoon of salt.
Stir the mixture occasionally and cook until it reaches a temperature between 236 to 239 degrees, which takes about 16 to 20 minutes.
Once the caramel reaches the right temperature, pour it over the cooled shortbread and smooth it out into the corners of the pan.
Allow the caramel to cool completely for at least 1.5 hours before adding the chocolate layer.
Chop 6 ounces of bittersweet chocolate finely and microwave it at 50% power, stirring every 15 seconds until just melted.
Once melted, add 2 ounces of finely grated bittersweet chocolate and stir until fully combined and glossy.
Spread the melted chocolate evenly over the cooled caramel layer using an offset spatula.
Refrigerate the assembled dessert until the chocolate is set.
