Combine 1 cup of light olive oil, 1 cup of Greek yogurt, and 1 egg in a bowl and whisk together.

Sift in 500 grams of plain flour in thirds, mixing with a whisk until it becomes too thick.

Switch to using hands to bring the dough together, then roll it on a surface briefly and place it back in a bowl to rest.

For the filling, use 500 grams of coarsely grated halloumi and mix in 2-3 teaspoons of dried mint.

Bind the filling together with 2 eggs.

Make balls out of the dough and set them aside.

Roll a ball of dough and flatten it with your palm and fingers, measuring with a bowl for size.

Add 2 tablespoons of the filling mixture to the pastry and fold it over, sealing the edges with a fork.
