2 small onions (cut in half)
3-4 slices ginger
500g chicken with skin
2 litres water
½ tbsp Himalayan pink salt or to taste
handful fresh coriander (cilantro)
2 large cinnamon sticks
2-3 star anise
8-10 cloves
rice noodles as required
hot water as required
chopped spring onion
handful fresh bean sprouts
5-6 fresh basil leaves
2 lime slices
sliced red chili
sriracha sauce or fish sauce or hoisin sauce

Grease frying pan with cooking oil.

Add onion and ginger, roast from both sides until lightly charred, and set aside.

In a pot, add chicken and water, and bring it to boil.

Remove the scum, add pink salt, and mix well.

In a bouquet garni, add roasted onion, ginger, fresh coriander, cinnamon sticks, star anise, and cloves, and tie to make a knot.

In the pot, add prepared bouquet garni and mix well, cover, and let it simmer on low flame for 1-2 hours or until chicken is cooked through and broth is flavorful.

Turn off the flame, remove and discard bouquet garni.

Take out cooked chicken pieces, let it cool, debone chicken pieces, and shred meat, set aside, and reserve prepared broth for later use.

In a bowl, add rice noodles and hot water, let them soak for 6-8 minutes, then strain.

In a serving bowl, add rice noodles, spring onion, shredded chicken, fresh coriander, bean sprouts, fresh basil leaves, lime slices, and prepared flavorful broth.

Garnish with red chili, sriracha sauce, and serve!
