In a pan over medium-high flame, add 1 kilo of tomatoes (around 5 to 6 medium size) and 2 big red bell peppers (or 4 medium size).

Optionally, add 1 tbsp of ginger root.

Cover and cook the mixture.

In a mortar and pestle, take 2 cloves, 1 tsp black peppercorns, 1 tsp cumin seeds, 1 star anise, and 1 cinnamon stick and grind them into a powder.

Pack the ground spices in a muslin cloth and seal it up, then place it on top of the cooking tomatoes and peppers.

Continue cooking until the tomatoes and bell peppers are cooked through.

Remove the spice pack and switch off the flame.

Grind the mixture to a smooth puree.

Strain the puree to achieve a smoother texture, discarding the residue.

Add 1 cup of sugar, 0.5 tbsp of salt, 1 tbsp of pink salt, and 1 tbsp of Kashmiri red chili powder to the smooth puree and mix well.

Cook the mixture over medium flame and add 2 tbsp of apple cider vinegar to preserve it.

Let it boil and cook until it thickens, stirring until it sticks to the back of the spoon.

Switch off the flame when the ketchup is ready.
