1

Prepare a whole chicken or use chicken thighs and drumsticks.

2

Dust the chicken with flour to remove excess moisture.

3

Heat extra-virgin olive oil in a pan and place the chicken skin side down to crisp it up.

4

Cut onions into wedges and add them to the pan.

5

Add chopped celery, including some leaves, to the pan to create a sofrito base.

6

Add red and yellow capsicum cut into wedges to the pan.

7

Cut cherry tomatoes and add them to the mixture in the pan.

8

Season the mixture with a little salt.

9

Increase the heat and add a splash of white wine, allowing it to evaporate.

10

Turn down the heat and add the chicken to the pan, cooking for about 10 minutes on one side.

11

Turn the chicken over and cook for another 10 minutes.

12

Check if the dish looks dry, and if so, add a little water as needed.

13

Check the chicken for doneness by making an incision near the bone; if the juices run clear, it is ready.

14

Add final seasoning with salt and garnish with parsley before serving.
