Heat a large skillet on medium-high heat.

Add 1/2 stick of butter to the skillet.

Cut 5 medium squash into even pieces and add to the skillet.

Chop 1 small to medium onion and add to the skillet.

Sauté uncovered until the squash and onions are tender and most of the liquid cooks out, about 15 to 20 minutes, stirring occasionally.

Add a little over 1/2 cup of sharp cheddar cheese to the mixture.

Crush 2 short stacks of Ritz crackers and sprinkle them on top of the casserole mixture.
